There's an old Somerset pub, now resurrected into a fantastic gastro pub and farm shop, that houses the famous Valley Smokehouse (patronised by Raymond Blanc and Phil Vickery).  Jon the founder, kindly cold smokes our Raw Somerset Honey over French Oak for us.  
The result is a delicious lightly smoked honey. Not too strong, just at the end of the mouthful.

Use as a marinade or glaze for roasted or barbecued foods, or just drizzled across a blue cheese, walnut and rocket salad.  I'm told it's also great on hot pizza, straight from the oven!
